During his time in Rockwell, McCarthy was part of won two Munster Schools Senior Cup titles, captaining the side that won the title in 2012 and a few weeks later went on to play for Ireland U19s against France and England.
He is the nephew of Munster great Mick Galwey.
Signed a one-year development contract making the move up to the senior squad at the start of the 2016/17 season.
Made his league debut coming off the bench against Cardiff Blues at the Arms Park in March 2016 and the following May was nominated for Academy Player of the Year.
